First you need to actually plant the farm yourself. Then you want a fresh villager (child or cured zombie) to become your farmer. Give them 8 stacks of wheat seeds before letting them into your farm. Once they're fully grown let them in. This will let them pick up seeds for replanting and ensure they never get an inventory space to pick up wheat.

To build such a mob switch, you will need a villager breeder, a job site block, and a zombie to zombify the villagers. Make sure to put blocks over the head of zombie villagers, so they do not burn in the sun (unless they are stored in water). A zombie villager mob switch usually consists of a large room to contain at least 70 zombie villagers.

Eventually I moved the villagers with the best trades into the corners, so now my underground iron farm is also a small villager trading hall. And one other warning: If your farm is larger than 28x28 it will large enough to support a zombie siege, which could mess up your villagers and possibly your doors..
The farm works by spawning mobs and filtering off all non-zombie mobs. These are converted to drowned and killed. When running the zombie villager&cured villager mode the drowned are separated from the zombie villagers (which cannot turn into drowned). Drowned swim when aggro, zombie villagers do not and so can be separated.
Next step: Iron golem friendly iron farm. You could technically use a standard mob farm or a zombie farm, but the efficiency will be way lower. or using gold farm linked with bartering farm for the chance to get iron nuggets from piglins. or buying iron tools/armor from villagers and smelting them down to iron nuggets.

My looping trade: one librarian sells a bookshelf for 2 emeralds, and the other buys a book for 1 emerald. The best way to re-roll trades on bedrock is using a sticky piston to move the lectern. Just make sure it's the lectern the villager is connected to. Also hold an emeralds in your hand.
